Product notes

The tonka bean is a precious seed native to South America, harvested from the fruit of the Brazilian teak tree. Its dark, wrinkled exterior conceals an exceptional fragrance that makes it a highly prized ingredient amongst chefs and pastry chefs.

The tonka bean develops rich and captivating aromas, blending notes of vanilla, almond, caramel, cocoa and mild spices. Its complex fragrance adds a touch of elegance and originality to culinary creations.

Mainly used grated in very small quantities, it enhances desserts, creams, mousses, ice creams, chocolates, compotes and pastries. It also pairs wonderfully with certain savoury dishes, sauces or dishes featuring vegetables and seafood.

With its highly concentrated flavours, a single pinch is enough to impart an intense flavour to a recipe. The tonka bean has thus become an essential spice for those seeking indulgent, refined and surprising flavour combinations.
