AOC AOP-certified Espelette chilli powder.

In the Basque Country, the chillies are first left to dry naturally in a greenhouse for around fifteen days; once sorted, they are then coarsely ground. AOP stands for Protected Designation of Origin. AOC stands for Controlled Designation of Origin.

Uses of AOC/AOP Espelette Chilli Powder

The success of Espelette chilli lies in the fact that it is not spicy, or only slightly so. On the Scoville heat scale, it scores 4 out of 10, meaning it is barely hot.

It is used in the same way as pepper, but its distinctive aroma means it can be used in starters, main courses and desserts.

Storing Espelette chilli powder (AOP/AOC)

Best before: 2 years. Store in a cool, dry place away from light; otherwise, the colour and flavour of the powder may deteriorate over time.
