"Flavours of the World" Chicken Skewers

Cooking on a griddle or barbecue is at the heart of summer meals, and this recipe showcases the ‘Mexican Cuisine’ blend in a marinade that transforms plain chicken breasts into a vibrant, wonderfully fragrant dish.

"Flavours of the World" Chicken Skewers

Ingredients

  • The base:

    • 1.5 kg chicken fillets, cut into large cubes.

    • 3 peppers (a mix of colours for visual appeal).

    • 2 large red onions, cut into quarters.

  • The ‘Trendy’ marinade:

    • 10 cl olive oil.

    • The juice of 2 limes.

    • 2 heaped tablespoons of Mexican Cooking Mix.

    • 1 teaspoon of garlic powder.

    • A pinch of ground cumin to bring out the earthy notes.

    • A few crushed pink peppercorns to finish.

Preparation (30 minutes)

  1. The marinade: In a large dish, mix together the oil, lemon juice, Mexican Cooking Mix, garlic powder and cumin. Add the diced chicken, mix well to coat each piece, cover and leave to marinate in the fridge for at least 2 hours (ideally 4 hours to allow the spices to infuse the meat).

  2. Assembly: On wooden skewers (soaked in water beforehand to prevent them from burning), alternate the pieces of marinated chicken with pieces of peppers and red onions.

  3. Cooking: (12 to 15 minutes) Cook on a griddle or barbecue over a medium-high heat. The chicken should be golden and caramelised thanks to the spices in the marinade.

  4. The finishing touch: Just before serving, sprinkle the skewers with a few crushed Pink Peppercorns to add visual interest and a slightly peppery, fragrant note.

Tip for serving this dish without making a salad: Serve these skewers with corn cobs grilled in salted butter or quarters of new potatoes roasted on the griddle, seasoned with a little salt and a pinch of turmeric to give them a vibrant golden colour.

A quick reminder to help you plan: If you’re hosting eight guests for lunch, I recommend starting the marinade that very morning (or ideally the day before) to bring out the full flavours. You can assemble the skewers just before sitting down to eat, leaving you plenty of time to enjoy the company of your guests.
